Ovenbaked Rosti with Bacon

Ingredients
- 6-8 x bacon rashers,trimmed
- 1.5 kg potatoes
- 1/3 cup olive oil
- 1 x medium size brown onion (chopped )
- 30 g butter
- 1/2 cup bread crumbs
- 1 x flat parsley for garnish
Method
1) Preheat oven to 180 C .
Grease a 22cm round spring-form cake pan with extra butter and dust with bread-crumbs all sides.
2)Trim the bacon,cut into smaller pieces and fry with onion in frying pan over medium heat until bacon change colour.
3)The potato wash and cook in salted water for about …..15 minutes,then strain,cool and peel.Use grater with biggest holes and grate the potatoes on.Add bacon with onion and mix all well.Taste,if anything need to be added.
4)Transfer the potatoes into spring-form and bake for ….1 – 1.5 hour or until nice and golden brown.
5)Serve with your favourite cooking meat and vegetable salad.
