Ingredients

  • 5 x large greens prawns
  • 10 g dried shrimp
  • 1 x eschallot, sliced
  • 40 g hard tofu, sliced
  • 40 g preserved turnip
  • 2 x eggs
  • 200 g rice noodles
  • 1 x garlic chives
  • 1 handful bean sprouts
  • 1 handful shallots
  • 1 handful roasted peanuts
  • 1 pinch dried chilli powder
  • 2 x lime wedges
  • 200 ml tamarind water
  • 100 g caster sugar
  • 50 ml rice wine vinegar
  • 150 ml fish sauce

Method

Soak rice noodles in warm water for 30mins.

Add oil to a hot wok, Fry prawns until they curl and change colour. Add egg and break up. Add dried shrimp, eschallot, tofu and preserved turnip.

Add drained noodles, toss well. Add tamarind water, fish sauce, rice wine vinegar and caster sugar. Add Garlic chives and a few bean sprouts, fried shallots, chopped peanuts and chilli.

Pile into a serving bowl and garnish with more fried shallots, bean sprouts, a wedge of lime, garlic chives and crushed peanuts.
