Ingredients

  • 180 g butter
  • 1 cup brown sugar
  • 1 tspn vanilla essence
  • 2 x eggs
  • 2 cups plain flour
  • 1 tspn baking powder
  • 100 g dark chocolate
  • 100 g unsalted peanuts

Method

Set the oven on 180ºC. Place butter, sugar and vanilla in the bowl and beat until smooth. Add one egg at a time and beat well.

Mix flour and baking powder in a separate bowl and add to the mix. Beat until the dough is smooth.

Chop the chocolate and peanuts roughly and mix with the dough.

Roll the mix into balls and flatten on baking trays with non-stick baking. Bake for 12–15 minutes! Allow to cool on the trays. Makes about 16-20 cookies.
