- 1 x cinammon stick
- 4 x quince
- 1 1/2 cup sugar
- 2 cups water
- 1 x apple peeled and grated
- 1 handful sultanas
- 1 handful walnuts
1- In a saucepan add the sugar cinnamon and water and bring to the boil.
2- Peel, halve and core the quinces. Add them gently into the syrup and cook the fruit for 15-20 minutes until they are just soft. Lift the fruits out with a draining spoon onto a serving plate.
3- In another saucepan mix the apple sultana and add 3 tablespoons of the remaining syrup and cook until the apples are cooked and the juice has been absorbed.
4- Add spoonfuls of apple mixture onto the quince, decorate with walnuts and drizzle some of the syrup before serving.
Note: You may add the seeds of the quince into the syrup before bringing to the boil for a more orange colour. I forgot to add them in mine.
Serve warm or cold with cream
