Ingredients

  • 2 x leeks, small home grown
  • 4 x shallots, white and tender green parts
  • 2 cups arborio rice
  • 2 Tbls butter
  • 3 Tbls olive oil, cold pressed
  • 2 x garlic cloves, minced
  • 4 x portabello mushrooms, sliced
  • 2 cups garden fresh produce, baby broad beans, borlotti, zucchini and sugar snap peas used here
  • 4 cups stock, home made pork stock used here
  • 1/2 cup white wine
  • 1/2 cup parmesan, grated
  • 200 g white goats cheese
  • 1 pinch freshly ground pepper to taste
  • 1 pinch course sea salt to taste

Method

gently sweat the leeks, shallots and garlic in the butter and oil, turn up the heat slightly and fry off the rice until translucent.
Add the wine and wait for it to be absorbed then add 2 cups of stock 1/4 cup at a time and allowing each 1/4 cup to be absorbed before adding more, stirring all the while so that the rice doesnt stick to the pan.
Add the mushrooms and continue with the rest of the stock as before until all absorbed.
add the baby garden fresh veg and the goats cheese and season to taste
remove from the heat and stir in the parmesan
serve immediately

  • For a risotto, this was totally great, pity the Brawn didn’t work!

  • When I saw this ,I thought ..Stodge!
    But though the presentation was a bit dodgey,it tasted absolutey NOM NOM NOM!
    Maybe a bit of practice with the visual effect would make this dish not only extremely tasty but pleasing on the eye. Make it a bit easier to look at

  • it looks like you may have too much stock and have over cooked the rice. Maybe cook the vegetables seperately to maintain their colour. Broad beans look very fresh though. :) Dylan

  • Fantastic risotto recipe. Even if I did have to buy my veges instead of fresh from the garden it was still very yummy and easy to make.
