- 1 1/2 cup plain flour (sifted)
- 1/4 cup caster sugar
- 1 x egg yolk
- 100 g butter softened
- 2 Tbls milk
1. Preheat oven to 200 degrees Celsius. Line 2 baking trays with baking paper. Using an electric mixer, beat butter and sugar until pale and creamy. Beat in the egg yolk. Add the flour and mix well using a wooden spoon. Stir in the milk to form a smooth dough.
2. Turn onto a lightly floured surface and bring it together. Roll out the dough to about 1cm thick. Cut out different shapes using biscuit cutters. Roll leftover dough together and repeat. Place the cut-outs on the baking trays, leaving enough space between them to allow them to spread during cooking. Sprinkle caster sugar and bake for 10-15 minutes or until golden. Transfer to a wire rack to cool completely.
3. To decorate, use 2 tbs. royal icing mixed with enough water to stick the pearls and sugar balls. If the icing is too stiff, add a bit more water. if it’s too runny, add more icing. Put aside to set.
