Ingredients

  • 3 x medium mashed banana's
  • 60 g melted butter
  • 6 x medium eggs
  • 4 Tbls honey
  • 2 Tbls natural maple syrup
  • 1 tspn vanilla extract
  • 1 tspn baking powder
  • 1 tspn bicarb (baking soda)
  • 1/2 tspn salt
  • 1 Tbls dried ground cinnamon
  • 1/2 cup coconut flour
  • 1/3 cup nuts (optional)

Method

Preheat oven to 170 C (if possible, don’t use fan forced) and grease a loaf pan with butter then line with baking paper.

Combine bananas and melted butter. Mix well. Add eggs, honey, maple syrup and vanilla and whisk until eggs are combined.

In a separate bowl stir all the dry ingredients together. When combined, add to wet ingredients. Stir in nuts (if using).

Transfer batter to the loaf pan and bake for 40 minutes or until a skewer comes out clean.

Makes 1 loaf.

Approx. 8 servings.

  • Oh my gosh, so yummy! I also popped a handful of dates and raw cashews through the food processor and mixed them in and sprinkled some pumpkin seeds on top. Will definitely be making this one again :)

  • I cooked this, but with only 30g of butter and 4 eggs. (I am bit fancy about fat intake). Still very nice evening treat, with nice cup of tea
