  • 300 g pumpkin peeled
  • 3 x eggs
  • 1 cup white sugar
  • 120 ml olive oil
  • 1 x lemon juice
  • 250 g plain flour
  • 2 tspn baking soda
  • 1 x cooking spray for greasing the form


Preheat oven to 180°C. Place pumpkin into a food processor bowl and process for few minutes until the pumpkin resembles crumbs. Set aside.
Using an electric mixer, beat the eggs until pale in colour and doubled in volume. While beating gradually add the sugar. Stop beating.
Add lemon juice and oil. Mix well. Then add flour and soda (or Self-Rising flour) and mix gently with a wooden spoon. Stir in a circular motion from the bottom up until flour is completely mixed in. Add pumpkin crumbs and gently mix until combined.
Put the mixture into prepared pan. Smooth surface.
Bake until golden or until a skewer inserted into the centre comes out clean. Dust with icing sugar.
