Ingredients

  • 10 x pumpkin leaves, tender young no bigger than a entree plate
  • 6 sprigs basil
  • 1/2 cup sunflower kernals, lightly toasted
  • 2 pinches salt and freshly ground pepper to taste
  • 1/2 cup parmesan cheese, grated
  • 1/3 cup olive oil, cold pressed
  • 1 x lemon, juiced
  • 1 clove garlic

Method

Roughly chop the leaves and garlic and place all ingredients into a processor except the parmesan and pulse until not quite smooth. turn out into a bowl and stir through the parmesan. Adjust the seasoning and serve with wafers, crudites, small salad leaves or stirred through pasta … the possibilities are endless

I made a batch into pesto mini pasties with an wholemeal spelt sourdough pastry as an entree.

  • This was truely amazing, never thought of using pumpkin leaves in a pesto. I ate a fresh pumpkin leaf and was a bit dubious, but in a pesto the pumpkin leaf added a beautiful green texture.

    • I was also surprised and the nutritional value and density made it a must try, that and the extreme abundance of pumpkin vine in the food forest. Now I am convinced these vegable leaves are impossible to ignore edibles.

    • I figured if the bunnie could eat them (he was stealing them as they wandered into his run) I should check if they are edible and so it seemed that they are and delightfully so too
