Ingredients

  • 1/2 cup uncooked quinoa
  • 1 cup water
  • 1 tspn chicken stock
  • 3/4 cups grated cheese
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup finely chopped ham
  • 1/2 cup finely chopped spinach
  • 1 x corn cob, kernels removed
  • 1 x egg

Method

Place quinoa in a sieve and rinse under running water. Drain. Place in a saucepan with 1 cup water and the chicken stock. Bring to the boil and then simmer, covered for approx 15 mins until the water has disappeared. Remove from heat and allow to cool.

Preheat oven to 180 degrees.
Once quinoa is cool, combine quinoa, cheeses, ham, spinach, corn kernels and egg in a bowl and mix until combined.

Grease a 24 hole mini muffin tray. Spoon mixture into tray pressing down to compact mixture.

Place tray in 180 degree oven for 20 mins until golden. Allow to cool in tray.
