- 2 cups cooked rice
- 1 kg mince meat
- 4 Tbls tomato paste
- 2 tspn curry powder
- 4 x eggs
- 2-3 Tbls parmesan cheese
- 400 g chopped canned tomatoes optional
- 1 Tbls salt to taste
Preheat oven 180 degrees C
In a large pot, cook rice according to instructions.
Fry meat, when brown add tomato paste, then enough water to cover meat in fry pan and add curry.
Simmer 10 minutes.
Return rice to pot once drained, add ingredients from fry pan & cheese & eggs, mix well.
Place on casserole dish and add enough water to cover.
Sprinkle a bit of Parmesan cheese on top.
Bake for 30-35 minutes.
Serve with salad.
