Ingredients

  • 250 g smooth light ricotta cheese
  • 3 x eggs
  • 1 Tbls caster sugar or 4 sachets of equal
  • 1 tspn vanilla essence
  • 1 cup skim milk
  • 1 cup self - raising flour
  • 1 x bottle of oil ( to fry )

Method

1)Place ricotta in a bowl,then add eggs,sugar and vanilla essence.Beat with a wire whisk until mixture is smooth,then beat in milk.

2)Sift flour into another bowl,add mixture in and mix well,make smooth batter.If the batter is to thick,add little bit extra milk.

3)Pour about 1/4cup of batter into a heated and greased fry – pan.cook until bubbles form on surface of batter,turn and cook other side until golden.Repeat process until all batter is used.

4)Serve with your favor filling and topping.

PS.I used for filling Greek yoghurt with ….bit of sugar and for topping I make from mixed berries sauce and was very yummy.For kids after school is perfect snack.
