  • 2 cups self - raising flour
  • 2 Tbls tablespoons butter
  • 3/4 cups milk
  • 1/4 cup ricotta cheese
  • 1 x whipped cream to serve
  • 1 x jam to serve


Preheat oven to 190°C fan-forced. Place self-raising flour in a bowl with butter and lightly combine with fingers until it resembles fine breadcrumbs. Mix milk & ricotta together in a cup until lumps from ricotta are dissolved into the milk. Make a well in the centre of the flour mix and add the milk/ricotta mixture and lightly mix with a knife until combined. Turn mixture out onto a floured surface and gently pat down using a floured glass to cut out round scone shapes (mixture makes approximately 6-8). Place onto a floured tray close together and bake in oven for approximately 15 minutes until tops slightly golden brown. Turn onto a wire rack and allow to cool slightly before serving with jam and cream. Enjoy! :)
