Roast Beetroot Salad

Ingredients
- 400 g beetroot,washed and trimed
- 80 g walnuts
- 1 Tbls olive oil
- 1 pinch salt
- 1 pinch black pepper
- 150 g goats cheese (crumbled)
- 100 g mixed salad leafs
- 1 tspn brown sugar
- 1 Tbls fresh chives (chopped very fine )
Method
1)Preheat oven to 200 C.Wrap each beetroot into aluminum foil and bake for 35-45 minutes or until tender,set aside to cool.
2)Toast the walnuts in frying pan over medium heat 1 minutes.Combine the walnuts with chives,vinegar,sugar and oil.
3)Peel the beetroots and cut to smaller pieces,add the,salad and pour over dressing.Gently mix all together.Season with salt and black pepper.Taste and see,if anything need to be added.Top with goat’s cheese and serve with toasted bread.
