Roast Capsicum, Sun Dried Tomato and Feta Bread

Ingredients
- 3 tspn dry yeast
- 2 tspn caster sugar
- 1 cup warm water
- 2 1/2 cups plain flour
- 1 tspn salt
- 30 g melted butter
- 1 x red capsicum (for filling)
- 1/3 cup finely sliced sun dried tomato (for filling)
- 1/3 cup pitted kalamata olives, halved (for filling)
- 50 g feta cheese, crumbled (for filling)
- 1/4 tspn dried oregano (for filling)
- 1 x egg, beaten (egg wash)
- 1 Tbls milk (egg wash)
Method
Prepare dough:
Combine yeast and caster sugar in a small bowl and add the warm water. Stir with a fork until combined. Set aside in a warm area for 5 – 10 mins until yeast has activated (starts to foam).
In a large mixing bowl combine plain flour and salt. Add yeast mixture and butter. Using a dough hook on mixer mix for approx 10 mins until dough comes together and bounces back when pressed lightly.
Set dough aside, covering bowl with glad wrap and a tea towel to rise until doubled in size. (approx 1 hour).
While dough is rising roast the capsicum. To roast, preheat oven to 220 degrees. Place whole capsicum on a greased tray and place in hot oven for 10-15 mins until capsicum blackens. Remove capsicum from oven and allow to cool on bench. When cool skin should peel off. Remove peel and seeds and finely slice the capsicum.
Once dough has risen, turn onto a lightly floured surface and flatten the dough to form a rectangle shape, approx 40 x 30cm. Place the filling mixture in the centre of the dough. Capsicum then sun-dried tomato, olives, then feta cheese, then oregano.
To braid the bread:
Cut slits in the bread on either side of the filling, about 4 cm wide. To braid, get one piece of cut dough and take it over the filling, pressing down lightly on the other side to secure. Take a piece of dough on the opposite side and bring it over the filling to the other side pressing down to secure. Continue until all pieces of dough are braided.
Cover bread and allow to rest for 15 mins in a warm place.
Meanwhile preheat oven to 180 degrees. Once dough has rested, combine egg and milk in a small bowl and brush over bread. Sprinkle over poppy seeds or sesame seeds. Place in oven for 20 mins until golden and sounds hollow on bottom when cooked.
