- 1/2 x roasted chicken
- 3 Tbls whole egg mayonnaise
- 1 x carrot
- 1 x large celery stick
- 1 Tbls fresh dill
- 1 Tbls fresh parsley
You will need a food processor or a magic bullet for easy processing.
Shred the meat from half a store bought roast chicken and place into processor bowl or magic bullet cup.
Add mayonnaise and chopped celery and carrot. Process until you reach a thick buttery consistency. Then stir through finely chopped dill and parsley.
Add salt and pepper to taste.
My kids love this spread. I make and rolls for my 10 month old and cut shapes from cookie cutters for my 5 year old.
You may wish to process the herbs to achieve a finer spread but I find you loose the wonderful dill and parsley flavour in over processing.
