- 1.5 - 2 kg pork belly
- 1 Tbls sea salt ( or cooking salt )
- 1 Tbls olive oil ( or any oil )
- 1 Tbls herbs & garlic seasoning ( from iga supermarket )
- 1 kg brown onion
- 1-2 kg pontiac potatoes (or any clasic potatoes )
- 1 x oil in spray
1)Preheat oven to 220 C or 200 C ( fan )
2)Place pork-belly on rack in roasting tray and rub the skin with oil and season with salt and with the herbs.Put it to oven and roast about 30 minutes or until crackling has popped.
3)Then reduce heat yo 200 C or 180 C and roast another 1.5 hour or until is cooked.
When you put the skewer in the juice must be clear.
4)Next day I cut it and fry in pan without oil,to get have beautiful design.(See on the picture)
5)Potatoes,wash,keep skin on and cut,but not trough,season with the herbs and spray them with little oil all over and bake in separate oven dish with roast.
1)Put onion in kitchen sink,pour in hot water for easy peeling no more crying,then dry with paper towel.
2)Cut onions to strips and fry in deeper pan with little oil until gold.I did not put in any sugar,because onion is sweet already when is cooked as that and come good.
PS.This recipe is very nice,but if you love eat PORK – BELLY.And with brawn bread is delicious to.(continental bread) and with gherkins,horseradish or mustard.
