Ingredients

  • 750 g chicken thigh fillets diced into small peices
  • 100 g diced bacon
  • 1 x brown onion diced
  • 1 tspn crushed garlic
  • 1 bunch broccoli divided into small ears
  • 1/2 cup flour
  • 60 g margarine
  • 11/2 cups milk
  • 1 cup chicken stock fresh
  • 1 cup grated cheese
  • 50 g baby spinach leaves(fresh)
  • 1/2 cup parmesan cheese

Method

Method:
Preheat oven at 180C /160C for fan forced Line a large baking tray with foil or baking paper.
Place pumpkin in oven to roast until golden and tender.
Meanwhile cook pasta . Place in a large bowl
Cook chicken pieces, bacon, onion & garlic till golden brown and chicken cooked through. Add broccoli, cook till soft.
Make a white sauce, using the flour, butter, milk and chicken stock and tasty cheese.
Combine, sauce, veges (including fresh spinach leaves and roasted pumpkin) pasta and chicken in a large bowl. Add fresh parsley to taste .Mix till combined. Place in your prepared dish. Cover with Parmesan cheese. Bake in oven for 20 minutes. Enjoy! J

Tip: if children do not like pumpkin..puree it into the white sauce..yummy!
