Ingredients

  • 8 x tomatoes
  • 40 ml apple cider vinegar (or lemon juice)
  • 40 ml olive oil
  • 2 tspn honey
  • 2 cloves garlic, crushed
  • 40 g feta cheese (optional)

Method

Preheat oven to 180C.
Combine vinegar, olive oil, honey and garlic in a small bowl. Add salt and pepper to taste, mix well. Cut a thin slice off the top of each tomato. Place tomatoes in a baking dish. Pour over marinade. Bake approx. 30 minutes, stirring occasionally. Top with feta. Enjoy! Try with sourdough bread.
