Ingredients

  • 6 x soft boiled organic free range eggs, cooled
  • 6 tspn rocket pesto, detailed in rocket pesto pasta
  • 6 x sage flowers
  • 1 pinch freshly ground sea salt, to taste

Method

This was so easy and so delicious and so well recieved I just had to share.

Slice each egg in half and top each half with a teaspoon of pesto and a sage flower.

serve as an hors d’oeuvre, as part of a salad or as picnic fare with a tiny pinch of sea salt to taste

  • the sage flower is a must add … I am having a flower renaissance in my cooking at the moment and I am so excited my nasturtiums and heartsease are sprouting to add to my menu …
    I love rocket also and I love their papery delicate flowers too

    • yes these are sage flowers. I made a potato salad today with nasturtium flowers in it … love my flowers. Another tasty flower is artichoke .. I missed a few buds and 2 went to flower and they are delicious! The almost cornflower blue petals are like vibrant tasty threads … great with eggs, in salads and dressings
