  • 3 x eggs
  • 1 cup milk
  • 1/3 cup sparkling water
  • 1 cup flour
  • 1/2 tspn salt

Method a medium bowl,beat together the eggsand milk until combined.mix in the sparkling water.add the flour and salt,stirring with a whisk until only a few limps of flour remain.cover with plastic wrap and let sit at room temperature for 30 minutes.

2.when ready to fry the pancake,stir the batter until it is completely smooth.heat a 20cm nonsick fry pan.fry about 2 to 3 minutes or until bottom is lightly browned.flip over and brown the second side.remove to a plate.

3.continue in this manner,adding butter and oil as necessary,and stack pancakes one on top of another on a plate.

4.fill the pancakes with your favourite jam and roll.

  • pancakes are favourite in my family but I hardly come to the point to stack them on top of each other, coz my ‘grizzlies’ finish them straight from the pan.
