  • 1/4 bunch basil
  • 1 cup baby rocket leaves
  • 4 x sliced ciabatta bread
  • 1 pinch sea salt
  • 1 punnet cherry tomato medley
  • 1 clove fresh garlic
  • 1 Tbls shaved parmesan cheese


Roughly quarter the cherry tomatoes and mix to combine in a bowl with torn basil leaves and baby rocket leaves. Season with salt and add a drizzle of olive oil and toss gently. Heat a non stick frying pan and drizzle with olive oil. Place the sliced ciabatta bread in the pan and toast till golden brown on both sides and put on a serving plate. Peel a garlic clove and rub the toasted bread slices on one side. Top each slice with the tomato medley mix and shaved parmesan on top. Drizzle with olive oil and serve immediately as a starter.
