  • 100 g plain flour
  • 2 tspn baking powder
  • 250 g butter
  • 150 g semolina
  • 12 x eggs
  • 100 g ground almonds
  • 350 g sultanas
  • 2 tspn cream of tartar
  • 5 Tbls vsop
  • 30 g silvered almonds
  • 100 g sugar


1). Sift flour and baking powder. Cream butter and sugar. Add semolina, then egg yolks and continue beating for 5 mins.

2). Add ground almonds, sultanas (lightly coated with flour) mix well and set aside. Preheat oven to 150degrees C.

3). Beat egg whites and cream of tartar until stiff. Fold in creamy semolina mixture. Fold in sifted flour. Add brandy, stir to mix.

4). Spoon batter into grease proof paper lined cake tins and bake at 150degrees C for 50 mins. Remove from oven, press onto cake top silvered almonds and continue to bake for 10 mins until golden brown.
