Ingredients

  • 6 x oranges
  • 1 x lemon
  • 4 x mandarins
  • 14 cups water
  • 1 1/2 kg caster sugar
  • 1 x vanilla sugar

Method

1)Wash oranges,lemon and mandarins and all cut into strips.Remove the pips and tied them in muslin bag.Soak the peel,pulp and pips overnight in the water in saucepan.

2)Place the fruit,water and pips in a large saucepan,cover with lid and cook until soft about 2hours.Remove the bag with pips.

3)In pan heat sugar and vanilla sugar on low heat until dissolved.Transfer into oranges mixture and boil until setting point has been reached.( 30 min.)The best is when you pour bit of mixture on a plate and with finger go through,make line and when stay stable it is ok.When need to be strain,use kitchen sieve.

4)Bottle mixture into clean jars,tight up and put them up side down.Leave to cool.

PS.I cut bit of mandarins and oranges skin and leave in.
