  • 1 x leek
  • 4 x potatoes
  • 1 L chicken or vegetable stock
  • 2 tspn butter
  • 1/2 cup cream


Slice leek
Peel potatoes and cut into small pieces
In a medium saucepan, cook the leek in butter for 7 minutes or until tender
Add potatoes and chicken stock into saucepan and cook until potatoes are soft
Using stick blender, puree the vegetables until smooth
Turn off the heat
Add the cream and stir well
Season with salt and pepper
Serve in a bowl decorated with parsley or spring onions
Delicious with fresh bread or garlic bread.
