- 1 x 2kg lamb shoulder - bone in
- 1 x garlic bulbs
- 1/4 cup olive oil
- 4 x whole carrots
- 1 x onion (roughly chopped)
- 2 x potatoes roughly chopped
- 1 pinch salt and pepper
- 1 bunch fresh rosemary
Preheat oven to 220’c
Combine oil, rosemary and garlic in a bowl. Score the top of the lamb rub oil mixture all over the lamb (getting both sides)
Place the lamb on top of some roughly chopped potatoes, carrots and onions.
Cover Roasting tray with tin foil
Put into the oven and turn temp down to 160′c
Roast for four hours basting regularly. You’ll know its cooked when you can peel the meat away from the bone with a fork.
Serve and enjoy.
