  • 200 g beef
  • 1 x onion (diced)
  • 5 x green pepper
  • 1 Tbls tomato paste
  • 1 Tbls pepper paste
  • 1 bunch parsley, chopped
  • 3 x aubergine
  • 2 cloves garlic
  • 1 cup yoghurt
  • 1 tspn black pepper
  • 2 Tbls oil


1- Poke the aubergine with a skewer on each side a couple of times and place directly on the gas to char the flesh of the aubergine. You will need to turn them over several times to get it to evenly cook until soft and tender. Set aside and cool for ten minutes. Once they are cool enough to handle peel the skin and chop the aubergine roughly.
2- Heat the oil and brown the meat. Add the onion, peppers and 1 crushed garlic cook for a few minutes and add the pepper, tomato paste, parsley, salt and black pepper. Cook on low heat for 5 minutes.
3- In a bowl mix the yoghurt, and crushed garlic. ( you may add a little salt)
To plate up: on a plate place the aubergine with the yoghurt in the centre followed by the minced meat and decorate with parsley.
