- 1 x egg
- 100 g ricotta cheese
- 250 ml milk
- 1/2 cup almond meal
- 1/2 cup self - raising flour
- 1/2 tspn cinnamon sugar
Place egg and milk in a bowl and whisk.
Crumble the ricotta into egg and milk mixture and fold through gently.
Peal and grate pear into a separate bowl and squeeze out any excess juice.
Add the grated pear by folding into mixture.
Fold through almond meal, sifted self raising flour and cinnamon sugar.
Add small dollops of batter to a pan that has been greased with spray oil or brush on melted butter.
Note: I love adding almond meal to things like pancakes and burger rissoles, but you can certainly make this recipe without the almond meal. It simply adds a slight sweetness to it.
Yield around 7 for a morning snack.
