  • 5 x large eggs
  • 150 ml cream
  • 1 tspn dijon mustard
  • 125 g feta cheese
  • 1/2 punnet baby spinach
  • 1 Tbls olive oil
  • 30 g butter
  • 1 x leek
  • 4 x sun dried tomatoes
  • 1-2 x puff pastry sheets


In a frypan on low heat add oil & butter and finely sliced leek, gently cook until tender, allow leek to cool. Whisk eggs, Dijon mustard, salt & pepper together in a bowl, fold in spinach, finely sliced sun dried tomatoes, cheeese and cooled leek. Line a quiche dish with the puff pastry, pour in egg mixture. Bake in a moderate oven for about 40 minutes, or until cooked through and pastry is puffed and golden.

Add: Ham, zuchini e.t.c but remember for every cup of extra ingredient add another egg.
