Ingredients

  • 100 g onion, thinly sliced
  • 1 Tbls olive oil (for frying)
  • 1 Tbls coriander seeds, crushed
  • 1 tspn cumin seeds, crushed
  • 250 g tomatoes, deseeded and flesh chopped
  • 100 g spinach
  • 150 g paneer, cubed
  • 1 pinch salt and pepper to taste

Method

This dish makes a great accompaniment to an Indian curry or a light lunch served with a roti or pitta bread.

Put a small amount of oil in the bottom of a heavy based frying pan and gently fry the onions, cumin and coriander over a medium heat for about 10 minutes or until cooked through but not brown.

Add the chopped tomatoes and continue to fry for 1 minute, then add the spinach and stir until wilted. Finally season to taste and add the paneer and stir until the paneer has heated through (about a minute).

Serve immediately with your chosen accompaniment.

    • Good question Louise, I actually make my own. There is a really easy recipe on Jamie Oliver’s website and I added cumin seeds to this one to make it even tastier! I have to confess I haven’t seen it in the shops near me, but then I haven’t really looked.
