- 1 cup chopped pited dates
- 1 tspn bicarbonate of soda
- 300 ml boiling water
- 60 g butter softened
- 3/4 cups caster sugar
- 2 x eggs, lightly beaten
- 1/2 tspn vanilla
- 1/1/4 cup self - raising flour
Place dates and soda in a large bowl. Pour boiling water over dates and set aside.
In a bowl combine butter and sugar, mix well. Stir in eggs and vanilla until well blended.
Fold in flour, dates and liquid.
Spoon into 16 lightly greased chinese tea cups
Place in steamer on bottom shelf
Steam 100′C for 15 minutes or until cooked when tested.
1 cup brown sugar
1 cup cream
Combine all ingradients and cook on medium low setting stirring until sugar has dissolved. Simmer without stirring for 3 minutes or until thickened
Serve Puddings with Caramel Sauce and a scoop of double cream
