- 2 x organic eggs
- 2 Tbls coconut oil
- 3/4 cups unsweetenend apple sauce
- 3/4 cups organic honey
- 2 tspn organic vanilla extract
- 2 cups ogranic dark rye flour
- 3/4 cups lsa mix
- 1/4 cup chia seeds
- 3 tspn baking powder
- 2 tspn baking soda
- 3 tspn cinnamon
- 2 tspn allspice
- 2 x medium granny smith apples
- 1 cup walnuts
Preheat the oven to 180′C. Grease a mini or regular muffin pan (apples need to be chopped smaller for mini muffins).
Peel and chop the apples into small pieces.
In a medium bowl, briefly whisk the eggs, add the coconut oil, apple sauce, honey and vanilla and combine.
In a large bowl, mix all the dry ingredients then add the apples and combine.
Add wet ingredients to dry ingredients and combine.
Fill muffin holes 3/4 full and top with chopped walnuts.
Bake in the oven for 10 – 15 minutes or until a skewer comes out clean. Cool for 10 minutes and then turn onto wire rack.
