- 1 bunch spinach
- 1 x onion
- 1 Tbls cornflour
- 100 g butter
- 300 g paneer cheese (1cm cubes)
- 2 tspn your favourite curry paste
- 1 1/2 cup milk
Wash spinach well then boil for 5 min and set aside.
Dice onion and fry in butter in heavy based saucepan until soft then stir in curry paste.
Add cornflour and reduce heat, stir until cooked (1-2 minutes).
Slowly add milk stirring continuously until sauce thickens.
Add spinach and paneer cheese then increase heat until it reaches a thick, rich consistency.
Serve on a bed of jasmine rice or as an accompaniment to your favourite indian dish.
