  • 2 x bananas, mashed
  • 1 cup self - raising flour
  • 2 x eggs
  • 1/2 cup sour cream
  • 80 g butter, melted
  • 1/2 cup brown sugar (sauce)
  • 1/2 cup cream (sauce)
  • 1 Tbls golden syrup (sauce)
  • 30 g butter (sauce)


To make the sauce:
Place brown sugar, cream, golden syrup and butter in a medium saucepan and stir over a medium-low heat, without boiling until butter has melted and sugar has dissolved. Remove from heat and set aside.

For puddings:
Pre-heat oven to 150 degrees.
Sift self-raising flour into a bowl. In a separate bowl, combine mashed banana, eggs, sour cream and melted butter. Add this wet mixture to the flour and stir to combine. Do not over mix.

Grease 6 dariole moulds. Place equal amounts of sauce into the base of each dariole mould. Place pudding batter evenly into moulds. Cover each mould with baking paper and secure tightly. Place moulds in a baking dish and add boiling water to come halfway up the sides of the moulds. Bake for approx 30 minutes until they pass the skewer test.

To serve, invert the puddings onto a plate. Serve with cream or icecream.
