Summertime King Prawn Salad

Ingredients
- 500 g queensland king prawns
- 2 x firm vine ripened tomatoes
- 1/2 x small spanish onion
- 1 x large ripe haas avocado
- 1 x lemon
- 1 bunch basil
- 1 Tbls cold pressed extra virgin olive oil
- 1 Tbls 10 year aged balsamic vinegar
- 1 pinch murray river salt flakes
- 1 pinch freshly cracked pepper
- 1 x ripe bowen mango
Method
1. Peel, devein and chop prawns into pieces (approx. 2cm) leaving a few prawns aside to use as garnish.
2. Dice one tomato. When dicing the other, cut in half and scoop seeds out otherwise the mixture will be too wet.
3. Finely dice the spanish onion.
4. Dice the avocado into similar sized cubes.
5. Cut the mango cheeks and thinly slice to use as garnish.
6. Finely chop a few basil leaves.
7. In a bowl add the prawns, tomatoes, avocado, onion and basil with a good squeeze of lemon juice, around a tablespoon of olive oil & aged vinegar, a pinch of salt and cracked pepper. Refrigerate for approx 30mins until chilled.
8. Place a metal cylinder in the centre of the plate and spoon in the mixture pushing the mixture down so it doesn’t fall over.
9. Place the mango slices on top of the stack in a circular motion and then add a deveined prawn on the top with the head and tail still on but the body peeled.
10. In a circular motion drizzle the balsamic glaze and olive oil. Enjoy!!
This light & fresh entrée serves 4 people and in one bite will transport you and your guests to the Sunshine State!

I have become enamoured with the flowers in my gerden and their uses in my cooking. My favourite is sage flowers, but heartsease, nasturtium, garlic chive, rocket and zucchini find their way into my dishes. I am looking forward to my bananas getting to flowering stage. A very great adventure in flavour.

Wow Helen, I’m jealous with all your garden growing! I seriously have a black thumb! Another nice herb flower is tarragon, it has a gorgeous vibrant yellow colour.

Delicious! I absolutely loved this recipe, and making it was fun too! Thoroughly enjoyed by all! I have to disagree with the below comment though, I thought that the tomato was fresh and soft and I feel that if I used capsicum instead it would have been too dominant – the tomato keeps the prawns being the star!

This is one of my favourite meals especially in summer, and i think that capsicum doesn’t bring out the true flavours of the dish, so tomato goes perfect with it, so YUM!

This tasted as good as it looked, and I would have to agree with using tomato as it meshed all the flavours together nicely! Capsicum would not have worked for me.

This was the staring dish of our week! The flavours were great and light. I found that the juice of the tomato mixed in really well with the olive oil (flavour combo) and also helped to keep the stack stay in place – so maybe better than the capsicum suggestion for me. Awesome dish so thanks again!
