Ingredients

  • 2 Tbls instant coffee
  • 1/2 cup water, boiled
  • 1 Tbls caster sugar
  • 12 x savoiardi biscuits
  • 200 ml thickened cream, whipped
  • 2 Tbls baileys coffee liqueur

Method

Combine instant coffee, boiled water and sugar. Cool slightly then add Baileys liqueur, mix until combined.

Break savoiardi biscuits in halves and dip in coffee mixture. Place half of biscuits in glasses (makes about 4-6 depending on the size of the glass), top each glass with 1/4 cup custard, remaining biscuits, whipped cream and sprinkle cocoa powder on top. Chill in the refrigerator for 30 minutes.
