- 1 Tbls olive oil
- 1 x brown or red onions ( chopped )
- 1 x red capsicum cut to smaller pieces )
- 2 cloves garlic(crushed)
- 600 g beef mince
- 1 cup leggo's tomato paste
- 1 x can of red kidney beans(rinsed)
- 1 x packet of tortillas
- 3/4 cups cheddar cheese(finely gratted )
- 1 x tub of sour cream
1)Heat oil in a large frying pan on medium heat,add onion,capsicum and garlic and cook about 3 minutes.Keep stirring.Add mince and cook until mince is brown and separate.Add tomato paste,beans and combine all together.Cook …5minutes or until will the mixture thicker.Taste and see,if anything need to be added.
2)On springform pan make layers,tortilla,mince mixture and again.Repeat until all tortillas and mince mixture is finish.Last layer must be tortilla.The top sprinkle with cheese and bake in preheated oven on 190 C or until top is golden.
3)Serve with vegetable salad or sour cream.
