Ingredients

  • 1 cup self - raising flour
  • 1 cup milk
  • 1 x small tin crushed pineapple, drained
  • 1/2 cup desiccated coconut

Method

Slowly add the milk to the flour and whisk until all combined. Set aside 1-2 tablespoons of the crushed pineapple and add the rest to the mixture with the coconut.

Heat a large frying pan and grease with a little spray oil.

Pour mixture to make 4 small pancakes and turn once bubbles form.

Repeat until all the mixture is used.

Serve with a little of the left over crushed pineapple and sprinkle with some desiccated coconut.

Makes about 20 small pancakes.
