- 1 x tin of tuna
- 1 x green capsicum
- 1 x cupfull of rice
- 1 x dollop of mayonnaise
This recipe saved my life. I would have starved to death at university otherwise. To this date, it remains the only thing I can cook. That and cereal and milk.
Take your cup full of rice and pour it into a small pot.
Add two cup fulls of water.
Place it on a full flame until the the water evaporates from the top layer of the rice.
When this happens, turn the flame to its lowest setting possible, cover the pot and leave for 20 minutes.
In the meantime, open your tin of tuna, drain the excess oil, and pour the contents into a bowl. Add a big dollop (I love that word – dollop) of mayonnaise, a bit of salt and pepper and mix it all together. Chop your capsicums into little squares and throw that in there. The crunchiness goes really well with the tuna mayonnaise I find!
If this has taken you 20 minutes- perfect! Turn your rice off, scoop some of it from you pot into your tuna mayonnaise and mix it altogether. Voila, you’ve got yourself a Mike’s special Tuna Rice dish!
*Not really on a bed of rice, it’s all mixed together, but that doesn’t sound as posh as a bed of rice…
