Ingredients

  • 300 g blueberries, fresh or frozen
  • 1 cup caster sugar
  • 2 Tbls water
  • 1/2 cup self - raising flour
  • 1/3 cup coconut
  • 2 x eggs, separated
  • 1/3 cup coconut milk
  • 80 g butter

Method

Preheat oven to 150 degrees. Grease six dariole moulds.
In a small saucepan, combine the water and 1/2 cup caster sugar over low heat until the sugar dissolves. Bring to the boil, reduce heat to low and simmer for 2 minutes. Add blueberries. Simmer until blueberries are tender and the sugar syrup has taken on a lovely deep colour.
Cream butter and remaining 1/2 cup sugar in a bowl until light and fluffy. Beat in egg yolks. Stir in flour, coconut and coconut milk.
In a separate bowl beat egg whites until stiff peaks, then fold this into the batter.
Spoon blueberries equally amongst dariole moulds, reserving the syrup.
Spoon batter equally amongst dariole moulds. Cover each mould with baking paper and secure tightly.
Place moulds in a baking dish and add boiling water to come halfway up the sides of the moulds. Bake for 30 – 40 minutes until they pass the skewer test.
To serve, invert the puddings on to a plate and drizzle over the reserved syrup. Serve with cream or icecream.

  • It is adapted from the AGT recipe. Yes, I have used blue berries instead of grapes, coconut milk instead of cream and changed the method from the original, ie eggs are separated, butter and sugar are creamed together, then yolks added, with the egg whites folded through at the very end.
