Ingredients

  • 500 kg chicken fillets, fat removed, cut into 3cm pieces
  • 2 x medium potatoes, cut into 3-5cm pieces
  • 2 x carrots, cut into 2cm pieces
  • 1 x leek, washed, halved, sliced
  • 1 x small brown onion, chopped
  • 1 x clove garlic, crushed
  • 2 tspn fresh thyme leaves
  • 2 cups chicken stock
  • 1 Tbls dijon mustard
  • 1/4 cup plain flour
  • 2 Tbls rice bran oil
  • 1 x sheet puff pastry, partially thawed
  • 1 x egg, lightly whisked
  • 1 x carrot, peeled, cut into ribbons (a mandolin or a vegetable peeler is ideal)

Method

1. Preheat oven to180 degrees Celsius. Heat 1 tbs. of oil in a large frying pan over medium-high heat. Cook chicken 5-8 minutes or until browned. Transfer to a bowl and set aside.

2. Heat remaining oil in the pan and cook, onion, garlic, leek and thyme. Sauté for 2-3 minutes or until the onion is soft. Add the potato and carrot, cook, stirring occasionally for 3 minutes.

3. Add chicken, mustard and flour. Stir until combined, then gradually stir in the stock. Bring to the boil. Reduce heat to low and simmer for 5-10 minutes or until the potatoes are soft but firm. Season to taste. Drain excess liquid.

3. Meanwhile, use an 8cm (diameter) 7.5 (high) food stacker to cut 4 discs from the pastry. Use the trimmings to make 4 10x1cm pastry strips. Place the discs and strips on a lined baking tray and brush pastries with egg. Top discs with another sheet of baking paper, then place another baking tray on top to flatten. Bake for 10-15 minutes or until golden and crisp. Remove trays. Transfer pastry to a wire rack to cool completely.

To Serve:

Place pastry discs on the serving plate. Place the food stacker on top of the disc and put the ingredients into the food stacker to create the pie’s shape. Carefully remove the food stacker before wrapping carrot ribbons around the base. Garnish the top with salad and a puff pastry strip.

~ We loved these pies the right way up so much that it inspired me to create an upside down version!
