  • 1 x grated onion
  • 1.5 cups scone mix
  • 1/2 cup vegetable oil
  • 1 cup grated tasty cheese
  • 1 tspn garlic granules
  • 1/2 cup chopped parsley
  • 1/2 tspn curry powder
  • 1 tspn all purpose seasoning
  • 1 pinch salt and pepper
  • 4 x 4 eggs
  • 3 cups 3 cups grated vegetables zucchini, sweet potato, pumpkin, carrot, then add tinned drained corn


Step 1) Place all grated vegetables in a large mixing bowl

Step 2) Crack eggs into food processor, add scone mix & spices – blend & add to grated vegetables. (Can whisk eggs & scone mix whilst whisking if don’t have access to food processor). stir & add 1/2 cup grated cheese.

Step 3) Poor mixture into greased oven pan until 20mm deep, can use quiche dish or oven tray.

Step 4) top with remainder of grated cheese – sprinkle with ‘all purpose seasoning’ and bake in mod 180 degrees Celsius oven for 35 minutes or until metal skewer comes out clean.

Step 5) allow to cool slightly & slice into pieces. can serve with crisp salad & sliced cold meat or your favorite grilled meat. or on its own with tomato chutney. freezes very well. This recipe is a great way to use up those vegetables in the crisper. Enjoy!
