Ingredients

  • 250 g of each: baby pumpkin, leek, tomatoes, paprika and union
  • 60 g garlic cloves and 60 g uncooked rice
  • 20 g of chili pepper and 20 g dried oregano
  • 1 cup olive oil
  • 2 cups water
  • 150 g processed cheese

Method

Again a “ONE-PAN” meal!

Peel the baby pumpkin and the union. Cut them in dices and fry them in the pan with olive oil together with the rice and mix it now and then. In the meantime cut the tomatoes, leek, and paprika in dices and add it to the stew. Add water, garlic, chili pepper and oregano. After maximum 20 minutes take the soup off the fire and mash it with a hand mixer. add the processed cheese in slices and mix again.
The soup is ready to serve with a touch of extra oregano

PS:
No salt added! the cheese usually is salty enough and …..the oregano is a healthy salt replacer!

In case you dislike processed cheese then try parmesan cheese!
or….our cream or even greek yoghurt suits well, but then add some salt too
