Ingredients

  • 600 g laucke bread mix ( including yeast )
  • 1 x egg (lightly beaten with fork )
  • 1 x vanilla sugar
  • 1/2 cup icing sugar
  • 1 cup plain flour (for dusting working surface )
  • 300-400 ml lukewater
  • 600 g grinded walnuts ( very fine in grinder )
  • 100 g icing sugar
  • 2 cups milk
  • 50 - 100 g plain biscuits (crushed )
  • 2 Tbls rum
  • 1 tspn caster sugar
  • 3/4 cups sultanas (soaked in hot tea ....30 min. )
  • 1 x extra egg for brushing strudels

Method

1)Sift flour into bowl,in small bowl dissolve yeast in little bit of water with 1 tablespoon of flour and 1 teaspoon of sugar.Mix well and leave to rise.Add to the flour,then add egg and make nice elastic dough.If need more water or flour add ,but the dough must be nice and elastic.Cover with tea towel and leave at warm place to rise.(doubled)

2)Filling
In saucepan heat milk on medium heat,add 100 g icing sugar,stir and add walnut,cook until bubbling then take it off from stove and stir in the crushed biscuits,make it sticker and sultanas.Add rum and stir.Leave aside to cool down.

3)Dust with plain flour working surface transfer the dough on and with rolling pin roll out into ….about 6 – 7 mm thick,and about 40 x 30 cm rectangle.Spread all over with half the filling,because you will make from the amount of dough 2 strudels and will be long.Put that on ….. bit greased baking tray,brush with egg and again leave aside to rise.( 15 – 20 min.)Bake in preheated oven on 170 C or until nice and golden.

4)Mix vanilla sugar with icing sugar and dust with that the strudel.

  • Hi Snjezana we call this orechovy strudel.I used flour for the bread and come perfect.I made 2 big ones and only 4 pieces left.Have a nice day and good luck in cooking.

    • Ok Snjezana.With ground it and cooked poppy seeds with sugar will be delicious as well.

      • Snjezana,when we used to live in Sydney,I buy the small manual grinder for poppy seed in flamington market and poppy seed you can buy on line.
