- 100 g squid
- 2 tspn vegetable oil
- 1 tspn salt
- 1 Tbls tomato puree
- 1 Tbls water
- 1 x pineapple
Cut the two sides off the pineapple, and then hollow out to create a bowl, keeping ½ cup of the flesh, and chop.
Add 2 tspns of vegetable oil to wok and stir in garlic and ginger.
Add squid, salt & sugar, and fry for 1 minute.
Put in remaining vegetables and tomato puree/ fry for a further 3 minutes, adding water.
Place all ingredients inside pineapple, and garnish with pepper and coriander.
