- 1 kg chicken thigh fillets, quartered
- 800 g can diced tomatoes
- 2 L brown onions, roughly chopped
- 1 tspn salt
- 1/2 tspn pepper
- 1 good pinch saffron threads
- 1 Tbls ground cumin
- 2 cloves garlic, crushed
- 1 tspn hot chilli powder if heat is desired
Saute together the onions, garlic, herbs of choice and tomatoes until starting to soften.
Add the salt, pepper, chilli powder if using, saffron, cumin then mix well for a couple of minutes.
Add the chicken and mix until coated then add water to simmer for approximately 25 minutes.
Allow sauce to thicken and serve with mashed potatoes and veggies, rice or couscous.
Carrots and capsicums work well with this recipe.
