- 2 x leeks washed and chopped in rounds
- 1 x onion (diced)
- 1-2 x carrots chopped in rounds
- 2 Tbls olive oil
- 1 tspn paprika
- 2 Tbls tomato paste
- 1/2 cup medium grain rice
- 1 L water
1- Heat the olive oil in a large pot and fry the onions and leeks.
2- Add the carrots and tomato paste, keep cooking until all ingredients have softened.
3- Add the water, paprika and salt and bring to the boil. Once it has boiled add the rice, cover and cook until rice has cooked.
