  • 8-10 x potatoes washed
  • 2 Tbls sumac
  • 1 x lemon juice
  • 1 bunch parsley
  • 3 shots spring onion sliced thinly
  • 1 x red onion halved and thinly sliced
  • 2 Tbls olive oil


1- Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium and cook potatoes, uncovered, for 3 to 4 minutes or until tender when pierced with a skewer. Drain. Transfer to a bowl.

2- Once the potatoes are cool enough to handle cut them into rough square pieces. In a big bowl.

3- Add all the ingredients: sumac, lemon juice, olive oil, parsley, red onion, salt and spring onion.

4- Gently mix all the ingredient and serve as a side dish or a salad to take to a BBQ.

Note: Sumac is a zesty lemon flavour that is added to Mediterranean dishes. It grows on a shrub and is basically the fruit of the shrub.
