- 1 x zucchini, grated
- 1 x red capsicum diced
- 1/4 cup chives, chopped
- 1 cup cheddar cheese, grated
- 2 cups self - raising flour
- 20 g butter, melted
- 1 cup milk
- 1 x egg, lightly beaten
Preheat oven to 180 degrees Celsius.
Lightly grease a 12 hole muffin fan.
Sift flour into a large bowl. Make a well in the center. Combine butter, egg & milk in a jug then pour into well & stir until almost combined.
Squeeze the excess moisture from the zucchini, then fold into the batter with cheese, capsicum & chives. Season with salt & pepper.
Spoon mixture into the muffin holes & bake for 20-30 minutes or until a skewer comes out clean. Set aside for 5 minutes then turn out onto a wire rack.
