- 2 x bigger zucchini ( 700 g )grated on biggest holes on grater
- 3 x eggs
- 200 g caster sugar
- 1/2 cup olive oil
- 350 g continental flour
- 15 g baking powder
- 1 tspn cinnamon powder
- 1 x tin of fruit salad in juice(strain with strainer )
- 1 x extra butter unsalted (for grease baking pan)
- 50 g continental flour
- 1 x vanillin sugar
- 250 g caster sugar
- 25 g unsalted butter( room temperature )
1)Beat eggs and sugar in bowl with an electric mixer until light and fluffy.Slowly pour in 1/3 of oil and add 1/3 of flour,still mix,but slowly.Repeat this until you use all oil and flour,then add baking powder ,zucchini and lightly fold in,but with spatula now.
2)Grease 29 cm diameter non stick round baking pan 3 cm high with unsalted butter and dust with flour.Pour in the mixture and dust with cinnamon powder.Add the fruit to the mixture and sprinkle with crumbs.
In bowl mix together 50 g continental flour with vanillin sugar,caster sugar and unsalted butter.(you have to used you fingers)
4)Oven 170 C,bake 35 – 40 minutes or until done.

It is really very soft and and yummy,you will love it.
